Vegan Jam-Filled Hand Pies

Wonderful, fragrant little pies with a light, airy dough! You can use any jam for the filling—just make sure it's not too runny. These are so good that you should make a double batch of dough right away, because they disappear fast!

    1. Pour the water into a saucepan and warm it slightly, then sprinkle in the yeast and stir. Add the salt and sugar and stir until the crystals dissolve. 2. Sift the flour into a separate bowl and add it to the liquid a little at a time. Once the dough reaches the right consistency, pour in the vegetable oil. It should be soft but pull away easily from the sides of the bowl. 3. This dough doesn't need any proofing time. 4. Divide it into equal pieces and roll each into a round. Spoon a little jam into the center of each and pinch the edges closed. 5. Heat a heavy-bottomed skillet with vegetable oil and place the pies seam-side down. Fry over moderate heat until they have a lovely, golden crust.
