Kaiserschmarrn — Austrian Shredded Pancake

An unusual sweet "omelet" that tastes a lot like crêpes. Delicious and quick to whip up for breakfast!

    Separate the whites from the yolks. Beat the whites with 1 tablespoon of sugar to stiff peaks.

    Mix the yolks with the vanilla sugar and flour, then add the milk. Stir until smooth and lump-free, then fold in the beaten whites gently.

    Peel and core the apple, cut it into quarters, and slice the quarters into thin slices.

    Grease the pan with butter, spread the batter evenly, and arrange the apple slices on top. Some people also add plumped raisins, but that's a matter of taste — I left them out. Cover and cook over medium heat until the underside is golden, then flip and cook until done. About a minute before it's ready, use two spatulas to tear the pancake into pieces. Dust the finished Kaiserschmarrn with powdered sugar. Best eaten hot.

  • A sweet pancake popular in Germany, though the recipe actually hails from Austria. As the story goes, Kaiserschmarrn was a favorite of the Austrian emperor Franz Joseph I (1830–1916), which is where the name comes from. Another legend says the emperor loved Palatschinken (thin sweet pancakes), and whenever they came out too thick or tore during cooking, the court cook served them to the staff in the shredded "Kaiserschmarrn" form, since they weren't fit for the emperor's table (per Wikipedia).
