  • Start by prepping the liver: wash it, pat it dry, remove any membranes, and cut it into large pieces. Prep the mushrooms ahead of time too — rinse, dry, and cut them into large pieces, then pour boiling water over them for 15–20 seconds. Next, make the coating: mix the cornmeal with the salt, paprika, and fenugreek. Dredge the liver pieces in the coating and fry them on both sides in a preheated skillet with olive oil, 2–3 minutes per side. Flavor the frying oil first with garlic (crush the cloves with the flat of a knife, fry them in the pan until golden, then discard them). Take the liver out of the pan and add the leek and onion sliced into half-moons. Add the prepared mushrooms and the water, cover, and cook for 15–25 minutes. When the mushrooms are almost done, pour in the sour cream and a little water; once the sauce comes to a boil, return the fried liver to the pan. Stir everything gently, add pepper, and salt if needed. Bring it all to a boil, then turn off the heat. Your pan-fried rabbit liver is ready! Serve it hot, garnished with fresh herbs and your favorite side. Steamed rice goes well with this dish. Enjoy!
