Yardlong Bean and Sorrel Omelet with Cheese
An appetizing, nourishing breakfast that fuels your whole day! Yardlong beans (also called asparagus beans) are a favorite vegetable in our family. I cook them in summer and put them up for winter in all sorts of ways — you can freeze them, for instance, and use them later in dishes just like fresh ones. Here's my favorite recipe for eggs with vegetables and cheese. Really tasty and filling!

- Peel the onion and slice it into half-moons. 2. Cut the tomatoes into medium pieces. 3. Grate the cheese. 4. Cut the bread into batons. 5. Wash and dry the yardlong beans, then cut them into pieces about as long as the bread batons. 6. Crack the eggs into a bowl, add salt and spices, and whisk. 7. Heat a skillet with vegetable oil, add the onion, and fry until golden. 8. Add the beans and bread and cook until the beans are tender. 9. Add the tomatoes and cook everything together for 3–4 minutes. 10. Add the sorrel, stir, and keep cooking until the sorrel darkens. 11. Sprinkle everything with the grated cheese. 12. Pour in the eggs and cook until set. Enjoy!
