Quick and Easy Yeast-Free Yogurt Fritters

Grandma's fritters — a lovely dessert straight out of childhood. Tasty and fragrant, with a fruity aroma and every bit as fluffy as ones made with kefir.

  • Pour the yogurt into a bowl, crack in the eggs, and add the sugar. Mix with a whisk or a hand mixer. Pour in the vegetable oil, add the salt and the baking soda, and mix again. Sift the flour and add it to the wet mixture in batches, stirring constantly until smooth. The batter should be smooth and not too thick — that's the key to fluffy fritters. Heat sunflower oil in a skillet. Spoon in the fritters and fry for 1½–2 minutes on the first side and about 30 seconds on the second. Breakfast is served.
