Wafer Tubes with Meringue Cream and Walnuts

    Whisk the sugar with one whole egg and one egg white.

    Add the flour and mix well.

    Add the cream (or milk).

    Onto well-greased baking sheets, pour a little batter at a time and spread it with a spoon into small, thin rounds. Mine came out about 3 inches (7–8 cm) across.

    Sprinkle each round with the chopped nuts. Put them in a hot (400°F / 200°C) oven for 3–4 minutes. Once the edges start to brown, they're done.

    Lift the wafers off with a knife and, while they're still hot (!), roll them into tubes or cones with the nut side facing out. I rolled them without pulling the sheet all the way out of the oven, since they harden fast and can crack. If yours do harden, pop the sheet back into a warm oven and they'll soften up again.

    While the tubes cool, make the cream. Separate 2 egg whites (the yolks — plus the yolk left over from the batter — can be saved for other uses). Beat the whites with a mixer until they grow in volume, adding a little citric acid to help them hold. Without stopping, add the sugar a little at a time. Beat to stiff peaks. Fold in the vanillin at the end.

    Fill the cooled tubes with the cream.
