Wafer Tubes with Meringue Cream and Walnuts
Crisp wafer tubes with walnuts and fluffy meringue cream — one for the sweet tooth. This recipe uses simple, easy-to-find ingredients, and the wafers bake up in no time. Just a few minutes of work and you've got a treat ready for tea!
Cooking method
-
Step 1:
The ingredients.
-
Step 2:
Whisk the sugar with one whole egg and one egg white.
-
Step 3:
Add the flour and mix well.
-
Step 4:
Add the cream (or milk).
-
Step 5:
Onto well-greased baking sheets, pour a little batter at a time and spread it with a spoon into small, thin rounds. Mine came out about 3 inches (7–8 cm) across.
-
Step 6:
Sprinkle each round with the chopped nuts. Put them in a hot (400°F / 200°C) oven for 3–4 minutes. Once the edges start to brown, they're done.
-
Step 7:
Lift the wafers off with a knife and, while they're still hot (!), roll them into tubes or cones with the nut side facing out. I rolled them without pulling the sheet all the way out of the oven, since they harden fast and can crack. If yours do harden, pop the sheet back into a warm oven and they'll soften up again.
-
Step 8:
While the tubes cool, make the cream. Separate 2 egg whites (the yolks — plus the yolk left over from the batter — can be saved for other uses). Beat the whites with a mixer until they grow in volume, adding a little citric acid to help them hold. Without stopping, add the sugar a little at a time. Beat to stiff peaks. Fold in the vanillin at the end.
-
Step 9:
Fill the cooled tubes with the cream.
-
Step 10:
The cream-filled tubes stay crisp for a while, so if you love that crunch, get the tea brewing right away. Enjoy!
