Warm "Fantasy" Salad

A healthy salad for anyone who cares about their own well-being and their family's!     Heat a skillet with a little cold-pressed olive oil. Slice the white part of the leek into half-moons. Leek isn't really meant to be eaten raw, but cooked it takes on a soft, pleasantly sweet flavor.

    Once the leek turns fragrant and soft, add the carrot cut into strips, cover, and let them cook together for a few minutes.
