Delicious Fried Eggs with Smoked Pork Belly and Tomatoes

This is our family's favorite breakfast. It comes out so tasty! Delicious, simple, and fast — try it, you won't be sorry! It doesn't turn out "wet," because it's cooked uncovered, and the aroma while it cooks is out of this world. This recipe has been perfected over the years.

    Gather the ingredients for our dish.

    Cut everything into cubes, the ham into strips, and the tomatoes into half-moons.

    First I fry the onion; as soon as it starts to turn translucent, I add the ham and pork belly. Fry for about 3 minutes.

    Next I add the bell pepper and fry for another 3–4 minutes, until it softens. Salt and pepper at this stage.

    Add the tomatoes. As soon as they soften, I peel off the skins — they come away very easily.

    Add the tomato paste. If your tomatoes are juicy, fragrant summer ones, you can skip the paste — but in the winter months it's a welcome addition.

    Stir and simmer for just a couple of minutes.

    Crack in the eggs, taking care not to break the yolks. Turn down the heat.

    And here's my secret! I gently stir the egg whites into the vegetable-and-meat mixture, trying not to disturb the yolks. Fry for about 2 minutes, until the whites are set (no longer runny). The yolks should stay runny.

    Sprinkle with green onion! And there's our dish, ready to serve.

    Carefully lift the yolks out of the pan along with the "base" beneath them and set them on plates. Enjoy!
