Beetroot Patties with Semolina, Onion, Cheese & Apple
You can't live on meat and fish alone! Beets are healthy and delicious. I used to be no fan of beets, but lately I've really enjoyed cooking with them.
Cooking method

Step 1:
Grate the beets on a medium grater (grate them by hand — no food processor or other gadgets).

Sprinkle in 2 tablespoons of semolina, stir, and let it stand for 30 minutes.

Finely chop one onion and sauté it in vegetable oil. Then add the eggs, grated apple, grated cheese, the sautéed onion, the bread roll soaked in warm water, salt, and sugar. Mix everything well with a fork until smooth.

Dip a tablespoon in cold water, scoop up a portion of the mixture, and roll it in breadcrumbs. Fry in vegetable oil on both sides, like regular patties. Make the sauce: stir together 150 g (about 2/3 cup) sour cream and 4 tablespoons of mayonnaise. Sauté the second onion in vegetable oil, pour in the sour cream–mayonnaise mixture, add 3–5 tablespoons of water, season with salt, and bring to a boil. Nestle the patties into the sauce, sprinkle with fresh herbs, cover, and simmer over low heat for 15 minutes. Let them rest, then serve.
