Fern Salad with Sesame Oil and Soy Sauce

A spicy, delicious salad-appetizer with a Far Eastern accent! Fern dishes are much loved in our family, and this spicy salad is one of them. You can make it with either fresh or salted fern. Some people say the taste reminds them of eggplant, others of mushrooms. Personally, I think fern has its own special flavor that words can't quite capture — you just have to try it! This salad is nice enough for a holiday table; just make it a day ahead so it has time to soak up the flavors. Today I made it with fern I salted last year.

Cooking method

    Here are the ingredients you'll need. I used dried hot pepper from my pantry; if you're using fresh, cut it into small pieces.

    Drain the brine from the fern, rinse it, and cover with cold water. Soak for 12 hours, changing the water now and then. After that, pour boiling water over it and let it sit for an hour. Then drain it in a sieve.

    Slice the onion into half-rings. Heat the oil in a large skillet, add the onion, and fry, stirring, for about five minutes until lightly browned.

    Cut the fern stalks in half.

    Add them to the onion in the skillet, stir gently, and cover. Lower the heat and cook for five minutes.

    Pour in the soy sauce, add the pepper, stir, and cover. Cook for ten minutes.

    Taste and add salt if needed (it depends on how salty your soy sauce is), stir in the minced garlic, give it one last mix, cover, and turn off the heat. Let it rest for another seven or eight minutes.

    Transfer the finished salad to a large serving bowl, cover, and refrigerate — for about three hours, or better yet overnight. Enjoy!
