Wash the eggplants thoroughly, peel and cut into two parts lengthwise.

Cut the garlic into thin plates. It is necessary to cut the zest from the lemon.

Take a suitable sized container, pour vegetable oil. When the oil is heated, we throw lemon zest and chopped garlic into it. Fry on medium heat for about five minutes until browned. Then remove the garlic and zest from the oil, and leave the oil to cool.

The prepared eggplants are fried in a frying pan on both sides until a crust forms.
Step 8:
Mix the cooled butter with sugar, honey, pepper and coriander.
Step 9:
Heat the resulting mass over low heat until it resembles caramel in consistency.
Step 10:
Pour the fried eggplant slices over the "caramel" and insist for several hours until it completely hardens.
Step 11:
Eggplants cooked according to the recipe in sweet and sour sauce can be decorated with herbs and served on the table.
