  • This dish calls for an oven roasting bag. But before we get to that, let's sort out the meat and the marinade. Cut the pork into pieces — the size is up to you, but try not to make them too big. Once you've got a pile of nice pork chunks, wrap them in plastic and pound them lightly to tenderize, then season with salt and pepper. Next, dust the meat with your spices (easiest done with the meat in a bowl). Take the first onion, cut it into pieces — any shape is fine — and press them into the meat so the pork soaks up the juices. It's a simple marinade, but it works. Give the onion juice about two hours to soak in. About halfway through that time, marinate the remaining onions separately: slice them into half-rings, put them in a bowl, and cover with boiling water, vinegar, lemon juice, salt, and sugar. Preheat the oven. Line a baking sheet fully with parchment. Fill the roasting bag with the pickled onions, layer the pork on top, and toss to combine. Tie the bag tightly, then poke a few small holes in the top (a needle works well). Bake for about an hour and a half, checking on it now and then. When it's done, turn the skewers out onto a big platter — and enjoy the aroma and the flavor of your work!
