Baked Grechaniki (Buckwheat and Meat Patties)
This wonderful main dish is sure to become a regular in your menu! Tasty and filling. It's a recipe from my friend Anna Grishchenko (Minakerman).

Cooking method
- Dice the onion, grate the carrot, and sauté them together. In a large bowl, combine the cooked buckwheat and the ground meat (pork + beef) and add the eggs. Trim the crust off the bread and soak it in broth (I use meat broth, but use whatever you have — you can even dissolve a Maggi bouillon cube). Once the bread has softened, add it to the meat along with the sautéed vegetables. Mix, then grind everything in a blender or through a meat grinder and work it like a cutlet mixture. Add salt, pepper, and spices and mix well — it should be a thick mixture. Shape into grechaniki, place on a parchment-lined baking sheet, and bake at 400°F (200°C) until golden on both sides. Serve with a cheese-and-garlic sauce: take soft "Druzhba" processed cheese from a tub, add mayonnaise, and stir well, then add garlic pressed through a garlic press and dill. Enjoy!
