Braised Pork with Prunes

Prune lovers will be delighted! A simple recipe for something really tasty. You'll need a multicooker to make this pork with prunes. If you don't have one, you can cook it in a heavy-bottomed pot with a tight-fitting lid, or a pressure cooker works too.

  • Cut the pork into pieces. Rinse the pitted prunes well and cut each one in half. Grate the carrot on the coarse side of a grater, and cut the bell pepper and onion into half-rings. In a separate bowl, combine the water and soy sauce and stir. Note that I don't add any salt — the saltiness of the soy sauce is plenty for me, though you might prefer it saltier. Add whatever spices you like; a dry seasoning blend for meat works well. Now layer all the ingredients in the multicooker: first the vegetable oil, then the pork, then the onion, followed by the carrot, pepper, and finally the prunes. Gently pour in the soy sauce and spice liquid you mixed earlier. Set the multicooker to the "Stew" program for an hour and a half. Serve the pork and prunes over a side of potatoes or pasta. Personally, I love it with cauliflower — but suit yourself!
