  • I really loved this fun, light recipe. Start by making four omelets in different colors. Yellow first: separate 4 eggs, keeping the yolks. Whisk the yolks, add a teaspoon of flour, a tablespoon of cream, a tablespoon of grated cheese, and salt, then whisk again. Cook in a covered skillet until set. Next, the white omelet: add a tablespoon of grated cheese to the whites, along with a spoonful of cream, a teaspoon of flour, and black olives cut into rounds; salt it and whisk. Cook the same way as the yellow one. The third omelet is green: use 3 eggs plus the same base ingredients, with spinach added. Whisk and cook. The fourth is the red omelet: 3 eggs + the base ingredients + hot red pepper + 3 tablespoons of tomato sauce. Whisk and cook. In all, you'll have 4 colored "layers": white, yellow, green, and red. Now make the spread — mix finely grated cheese with garlic pressed through a press and mayonnaise. Set aside a third of it, and stir the herbs into the larger portion. Assemble the cake: spread three layers with the herbed sauce and the top one with the plain sauce. Then decorate: hard-boil 1 egg and grate the yolk and white separately. Build a snowman from the yolk, topped with the white. Grated carrot becomes his hat, scarf, felt boots, and mittens; boiled grated beet makes his mouth and skis; the eyes are cloves and the nose a bit of carrot. Make little fir trees from grated green radish. Your scene is done — the cake looks lovely both on top and when sliced.
