Cooking method
First, soak the black mushrooms and squid in boiling water. Cut the mushrooms with scissors and mix salt, sugar, pepper, chopped green onions and mushrooms with minced pork in a bowl.
We leave only hoods from squid, we clean out all the insides, and if squid with tentacles, then we throw out the tentacles. Stuffing is put into the hood of the squid so that there is a little space left to the top. And sew up the squid with a needle and thread with large stitches over the edge. With a toothpick, we make several holes on both sides for steam to escape. Heat 2 tablespoons of oil in a frying pan and fry finely chopped garlic. Then we put squid in a frying pan and fry them on both sides. Mix soy sauce with sugar, and pour this mixture into a frying pan with squid. Add another half cup of water, cover with a lid and reduce the heat. Simmer the squid for 15 minutes, turning them over every five minutes. Add the chopped green onion and simmer for another two minutes. We put the finished squid on a dish and cool it slightly.
Before serving, cut the squid into slices and serve with rice and soy sauce.
