Pan-Cooked Squid Stuffed with Pork and Dried Mushrooms

  • First, soak the dried mushrooms and the squid in boiling water. Snip the mushrooms with kitchen scissors, then in a bowl combine the salt, sugar, pepper, chopped green onion, and mushrooms with the ground pork. Use only the squid bodies (tubes) — clean out everything inside, and if the squid have tentacles, discard them. Stuff the filling into each squid tube, leaving a little room at the top. Sew the opening closed with a needle and thread, using large stitches over the edge. With a toothpick, poke a few holes on both sides so steam can escape. Heat 2 tablespoons of oil in a skillet and sauté the finely chopped garlic. Add the squid and brown them on both sides. Mix the soy sauce with the sugar and pour it over the squid in the pan. Add another half cup of water, cover, and reduce the heat. Simmer the squid for 15 minutes, turning them every five minutes. Add the chopped green onion and simmer two more minutes. Transfer the squid to a platter and let cool slightly. Before serving, slice the squid into rounds and serve with rice and soy sauce.
