- Cod cakes are a popular dish not just in Russia but abroad as well. Making them takes a bit of time and effort, and here I'll walk you through the recipe. Let's begin. Start by skinning about 2 pounds (1 kg) of cod. Run the fish fillet through a meat grinder; briefly soak the crustless white bread in milk, squeeze it out, and pass it through the grinder along with the fish. Add one small raw onion plus two large ones that you've sautéed together in a mix of sunflower oil and butter. Beat two eggs and mix them into the fish. Season with salt and pepper to taste, then let the mixture rest in the fridge for one hour. Just before frying, tuck a piece of frozen butter into each cake. Roll them in breadcrumbs. For the sauce, stir gherkins into Provençal-style mayonnaise (mix the hot ketchup with the mayonnaise, add a teaspoon of cognac and the finely chopped dill). The dish is ready to enjoy — bon appétit!
