Tasty Mushroom Sandwiches

A great idea for a delicious, filling snack! Long live the humble sandwich — you just can't get by without it. It bails us out anytime: get the urge to nibble on something when the fridge is bare, throw together a couple of sandwiches, put on the kettle, and there's your snack. I want to share one recipe with you. You can make it even for guests — trust me, you won't be embarrassed. You can keep this spread in the fridge and use it whenever you like — tasty mushroom sandwiches.

    Boil the dried mushrooms (40 min), then chop the mushrooms and onion.

  • For this you'll need dried mushrooms — I prefer porcini. Boil them and chop them finely, then fry them with the onion in sunflower oil, using just a little oil. Take a few slices of white loaf and soak them in milk, then squeeze them well and run them through a meat grinder. Mix this whole mass together with sour cream (or heavy cream), the mushrooms, and the butter. That's it — done. If you'd like a smoother spread, push it through a sieve or use a blender. Dark rye bread is perfect with this. As you can see, it takes no more than twenty minutes to make, and you'll enjoy it all day long.
