- Hawaii is a long way off, and none of us can hop a flight there every day just to taste the local food. So I decided to translate a few Hawaiian recipes from English — I think you'll enjoy them. Grab a large Dutch oven and, in a little vegetable oil or margarine, first fry the diced sausage, then add the ground beef. Cook until golden brown, then stir in the seasoning mix and a dash of Tabasco. In a separate saucepan or deep skillet, sauté the green chiles, diced onion, and bell pepper cut into half-rings, and season with peppercorns. Transfer all of that into the pot with the meat. Add the beans, then pour in water. Simmer over low heat for 3-4 hours, stirring often. If the sauce is still thin toward the end, stir in a little corn or potato starch to thicken it. Cook the rice separately. Spoon the rice onto a platter and ladle the chili on top. The recipe's author also notes that this dish goes down nicely with a cold, light beer.
