  • I grind young pork into a meat mixture. I boil the rice and sauté the onion until light golden, then add both to the meat, season with salt and pepper, and mix thoroughly. Spice lovers can add more seasonings beyond salt and pepper; I like a little hot red pepper, though it does make the dish quite spicy — I love it, but tastes vary. I shape the mixture into balls, roll them in flour, and fry them in a skillet with vegetable oil. Meanwhile, in a second skillet, I sauté onion sliced into thin half-rings together with shredded carrot, tomatoes, and sweet pepper. When this vegetable sauté is nearly done, I add the tomato paste, salt, and dried herbs. I dissolve a bouillon cube in two cups of hot water. I pour the pre-combined sauté and broth over the pork "hedgehogs" and braise them, covered, over very low heat for half an hour. This recipe leaves tons of room for creativity — pick your herbs and spices to taste, and the dish can turn out sweet, aromatic, or fiery-hot, whatever you like. A cafeteria cook shared this recipe with me; it's an everyday dish, but it's good enough to serve to guests, too.
