  • This Moldovan dish is especially delicious cooked on the grill. Every family makes it their own way; this is the version I liked. Take equal parts pork, veal, and lamb, and run the meat through a grinder twice (you can also use a food processor). If you're using a regular meat grinder, on the second pass add 2 onions and 5 garlic cloves per 1 kilogram (about 2 lb) of meat. Season the mixture with pepper, salt, and coriander. Add a spoonful of cornstarch and a third of a teaspoon of baking soda. Once everything is in, start kneading — first by hand, gradually working in 3 tablespoons of vodka or beef broth. When the mixture is smooth, work the air out of it by slapping it down into the bowl at least 50 times. Refrigerate the mixture for 4–12 hours. Take it out and roll it into sausages about 6 inches (15 cm) long. Grill them, or cook them under the broiler in the oven. As they cook, be sure to brush the mititei with vegetable oil a few times. You can also skewer and grill the mititei over a campfire at picnics — they make the best outdoor snack. Enjoy the outing!
