    How do you braise zucchini in sour cream? Get your ingredients ready. You can swap the olive oil for any vegetable oil, and sour cream of any fat level will work.

    Wash and dry the zucchini. If they're young with tender skins, you can leave them unpeeled. For more mature zucchini, scoop out the seeds and peel the skin. Cut the zucchini into half-moons at least a quarter-inch thick; if a zucchini is large, cut each round into more pieces.

    Peel and rinse the garlic. Grate it on a fine grater or put it through a press — or just mince it finely. Add as much as you like for a more savory flavor.

    Warm the olive oil gently in a wide skillet. Add the zucchini and cook, stirring, for 5 to 7 minutes. If young, juicy zucchini give off liquid, turn up the heat and cook them uncovered until the moisture evaporates — but watch them closely so they hold their shape.

    Add the sour cream, salt, and ground black pepper. Stir gently. Cook over low heat, covered, for about 5 minutes.
