    Gather the ingredients you'll need to make homemade tomato paste sauce, in amounts proportional to the ratios given. You'll need the tomato paste itself (choose a high-quality, natural product — the flavor of the paste will define the finished sauce), some water, salt, ground black pepper, ground cinnamon, and a little sugar to balance the flavor.

    Put the tomato paste in a small ladle or saucepan — you can use any bowl that can be heated on your stove.

    Bring the measured amount of water to a boil and pour the boiling water over the tomato paste. Stir well so the paste dissolves evenly in the hot water.

    Add the salt, sugar, ground black pepper, and ground cinnamon to the sauce. Stir until the salt and sugar have completely dissolved. At this point you could say the sauce is essentially ready.

  • This homemade tomato paste sauce can be built on endlessly! It's a basic recipe that leaves plenty of room to experiment with all sorts of ingredients. You can add onion and/or carrot, chopped and sautéed in a separate pan. Toward the end of cooking, you can stir in finely chopped, well-rinsed prunes. Adyghe cheese grated on a coarse or fine grater gives a very interesting texture and flavor. You can add chopped herbs to taste (the sauce turns out especially interesting made with cilantro). And of course you can add any of your favorite spices and seasonings: Svan salt, herbes de Provence, and so on. By varying the amount of water, you can easily adjust the thickness of the sauce.
