Stewed Beans with Blood Sausage

The dish is remarkably hearty — the staying power comes from all the starch, carbs, and protein that beans bring to the table. And it's seriously spicy thanks to the chili pepper.   • Pour the beans into a deep bowl, cover with water, and leave to soak overnight.
  • In the morning, cover the beans with fresh water (enough to fully submerge them) and set over the heat. Once the water boils, let it go for about 5 minutes, then drain it into a separate pot (save this cooking liquid — you'll need it).
  • Cover the beans with water again, add the bay leaf, and boil until tender.
  • Peel the onion and garlic. Slice the onion into half-rings and mince the garlic finely with a knife. Sauté them in vegetable oil until soft and golden.
  • Cut the blood sausage into pieces (about 2 x 3 cm) and add them to the onion. Fry for 5 minutes.
  • Dice the chili pepper finely and add it to the pan after the sausage.
  • Add the cooked beans to the rest of the ingredients and spoon the adjika over everything. There won't be quite enough liquid, so make up the difference with the reserved bean cooking liquid you drained earlier.
  • Add salt and pepper and, once the liquid comes to a boil, keep it at a bare simmer over very low heat for about 15 minutes.
  • That's it — the dish is ready to serve.
