Beef Lagman
Lagman has been made since ancient times. It originated in China and was later reshaped and expanded under the influence of Uyghur and Dungan culture and the traditions of the peoples of Central Asia. What makes this dish distinctive is that it's built up step by step, cooking each element separately: the finely cut vegetables — onion, bell pepper, tomatoes, carrots, green radish, eggplant — are cooked apart, along with the meat and spices. It can be made with beef, lamb, or even chicken.

- Cut all the vegetables into medium strips and the meat into medium pieces. Heat the oil in a cauldron, add the cumin and coriander, warm the spices for 30 seconds, then add the garlic and cook for another 30 seconds. Add the onion and cook for 1 minute. Add the meat and sear over high heat, stirring constantly, for 3–4 minutes, until browned. Add the carrots and cook for 1 minute. Add the tomatoes and cook for another 1 minute. Add the celery and radish, stir, and cook for 1 minute more. Add all the spices and stir. Add the eggplant and bell pepper and cook for another 1 minute. Pour in the water, bring to a boil, and simmer over low heat for 1 hour and 20 minutes, until done. Cook the lagman noodles until done, following the package directions. Put the noodles in a bowl, top with the meat and vegetables, and ladle the broth over. Garnish with fresh herbs and rings of hot pepper. Enjoy!
