    1. Pit the tamarind and dates, drop them into a bowl, cover with hot water, and let soak for 15–20 minutes. 2. Transfer the plumped dates and tamarind to a blender. Peel the ginger, slice it into coins, and add it to the blender along with the cumin, then pour in the water and add a pinch of ground red pepper. 3. Blend everything to a smooth paste, scrape it into a skillet, and set it over the heat. Simmer for 5 minutes, stirring constantly. Spoon the finished sauce into a serving bowl.
