Chinese-Style Clay-Pot Frog Legs
A truly Chinese flavor — cook something unusual and savor it! I used to make chicken pieces this way, and recently I tried it with frog legs. It turned out amazingly delicious! Hot, spicy, sweet, and sour all at once — genuinely Asian!

- For this dish you'll need a flameproof clay pot you can cook over direct heat. Such pots are common across Asia and Europe; a heat-resistant clay pot can be found in the U.S. at Asian markets or online. Mine was a gift a friend brought back from a trip abroad. So, let's make the frog legs: 1. First, marinate the frog legs: combine the soy sauce, oyster sauce, sugar, cornstarch, sesame oil, ground black pepper, and salt. Toss the legs with the marinade and let them sit for 30 minutes. 2. Peel the onion, garlic, and ginger, then cut the onion into small pieces, slice the ginger, and mince the garlic. 3. Heat the vegetable oil well in the pot and fry the legs until golden. Remove them from the pot and pour off the oil, leaving about 2 tablespoons. 4. Reheat that oil and add the chilies (fresh and dried, whole), onion, garlic, and ginger. Stir-fry over high heat for 2–3 minutes. 5. Pour in the rice wine, oyster and soy sauces, and balsamic vinegar, then add the cornstarch. Stir it all together and cook for a couple more minutes. 6. Pour in the water, add the Sichuan peppercorns, and cook everything together for 3 minutes. 7. Return the fried frog legs to the sauce and simmer them for 2 minutes. 8. Add the salt and sugar and pour in the sesame oil. 9. Stir in the green onion. Serve the dish hot. Enjoy!
