Cooking method
To prepare this dish, you will need a special clay pot in which you can cook on fire. Such dishes are common both in Asia and Europe. In Russia, it is not so easy to find a pot made of heat-resistant clay, but it is also possible. Mine was brought to me by a friend as a gift from a trip abroad.
So, we are preparing frog legs:
1. First, the frog legs need to be pickled, for which combine soy and oyster sauce, sugar, corn starch, sesame oil, ground black pepper and salt. Mix the paws with the marinade and leave to stand for 30 minutes.
2. Peel the onion, garlic, ginger, then cut the onion into small pieces, ginger plates, garlic chop.
3. Heat the vegetable oil well in a pot, fry the paws in it until golden brown. Put them out of the pot, drain the oil, leaving about 2 tbsp. l.
4. Reheat the oil and add to it chili pepper (fresh and dried, whole), onion, garlic, ginger. Fry on high heat for 2-3 minutes.
5. Pour rice wine, oyster and soy sauce, balsamic vinegar, add corn starch. Mix everything and cook for a couple more minutes.
6. Pour in water, pour Sichuan pepper, cook all together for 3 minutes.
7. Put fried frog legs in the resulting sauce, simmer them for 2 minutes.
8. Put salt and sugar, pour in sesame oil.
9. Add the green onion, stir.
Serve the dish hot. Bon appetit!
