  • This recipe for putting up hot peppers for the winter will appeal to anyone who loves heat. Take prepared peppers in different colors (red and green), wash them thoroughly, and remove the stems. Set a skillet of a suitable size over the heat, pour in the oil, and add the peppers. Sprinkle them with the salt and sugar and stir well. Simmer the peppers over medium heat, stirring constantly. As soon as they start to soften, add the spices, parsley, and vinegar, then stir and continue to simmer for at least another 15 minutes. Spoon the finished peppers while still hot into clean, dry prepared jars and seal with the lids. In winter you can use this preserve as a seasoning or, if you like, simply eat it alongside various side dishes. I especially enjoy it with soy sauce and rice. Khmeli-suneli is a Georgian dried-herb spice blend.
