  • Cut the turkey into small pieces and brown them on all sides in a skillet with hot oil, then transfer to a saucepan and keep warm, covered with a lid left slightly ajar. Next, warm the tomato purée in a little oil and stir in the grated or finely chopped celery and parsley. Sprinkle in the flour, mix thoroughly, and add the chopped mushrooms that were stewed in their own juices. Peel and finely chop the onion. Add the broth, onion, and sour cream. Cook for about 12–15 minutes, then stir in the minced garlic and salt. Return the meat to the sauce and simmer over low heat, covered, until fully cooked. Garnish the finished dish with chopped dill or slices of tomato. Serve with fried potatoes or boiled rice on the side. This makes a wonderful dish for a dinner party, and I have no doubt your guests will ask for the recipe so they can make turkey with mushrooms themselves.
