  • Beet spread is one of my husband's favorite snacks. He'll eat it with just about anything — meat and poultry, vegetables, grains — which is why I make it so often, especially in winter. So let me share this easy recipe with you. Start by boiling the rinsed beets for about 10 minutes, then peel them and grate them on the coarse side of a box grater. Pour a little oil into a skillet and sauté the peeled, finely grated carrots for a few minutes. Add the prepared beets to the carrots and simmer the vegetable mixture over low heat, stirring constantly, for 25–30 minutes. Then season with salt and pepper to taste, stir in finely chopped, sautéed onion, and simmer for about 10 minutes more. Take the beet spread off the heat, add a finely chopped head of garlic, stir, let it cool a little, transfer to a bowl, and serve. Enjoy — and share it with the people you love!
