Strawberry Confiture

Thick, delicious, bright, rich, and no sterilizing required! Strawberry confiture comes together fairly quickly, not counting the time the berries soak overnight. It has one secret ingredient that may surprise you. Definitely give it a try!

Cooking method

    How do you make strawberry confiture? Gather the ingredients. Choose fresh, undamaged strawberries. I prefer small ones, so I don't have to cut them into pieces.

    Cover the berries with plenty of water, rinse them well, and scoop them out. I don't recommend draining them in a colander, because the sand washes off the berries and sinks to the bottom of the bowl while the berries float on the surface. If you tip everything into a colander, all that sand ends up back on the berries. So I scoop the berries out by hand and put them in a colander to drain off the excess water.

    Hull the washed berries and put them in a bowl.

    Mix together half the sugar, the citric acid, and a couple of pinches of salt.

    Sprinkle the berries with this mixture and splash on the alcohol. Leave the berries to sit for a few hours so they release their juice. I usually leave them overnight.

    The berries have released plenty of juice.

    Transfer everything to a cooking pot and set it on the heat. Add the remaining sugar. If the berries are sweet, you can add a little less.

    Bring the berries to a boil. Stir until the sugar dissolves. Reduce to the lowest heat and cook the berries for 25–40 minutes. Stir so that not too much foam forms.

    During cooking, the whole mixture will thicken. Take it off the heat and let it cool. As it cools, all the foam settles and the confiture takes on a uniform, rich color.

    Prepare the jars. Wash them well and sterilize them by whatever method is convenient: in the oven, in the microwave, or over hot steam. Scald the lids with boiling water.

    The warm confiture can be ladled into the prepared jars and sealed with lids.

    The confiture comes out beautiful, delicious, and fragrant! Store the jars in a cool place. Enjoy the treat!
