Preheat the oven to 200 °C. In a small bowl, mix olive oil, honey, coriander seeds, cumin. Put the carrots and garlic cloves in an even layer in a baking dish. Season generously with salt and pepper. Add a mixture of olive oil with honey and spices and mix.
Bake for about 20-30 minutes until golden brown. Stir the vegetables periodically during cooking. Remove from the oven, finely chop the fried garlic. In a small bowl, mix the chopped garlic with herbs, parsley and lemon zest. Sprinkle the carrots with herbs. Season to taste with salt and pepper. Serve warm or at room temperature.
