Step 1:
To make cookies, we will need egg white, powdered sugar and almond flour. Also, if desired, you can add a couple of drops of almond flavor to the cookies, if there is one. Almond flour for this cookie is better to take coarse grinding, then the almonds will feel better. If you can't buy almond flour, then it's easy to cook it yourself. Almonds need to be cleaned and ground in a coffee grinder.
Step 2:
So, pour almond flour into a bowl and add powdered sugar to it. By the way, it is advisable to sift the powdered sugar beforehand to break up all kinds of lumps.
Step 3:
Mix thoroughly with a spatula.
Step 4:
In another clean and dry bowl, whisk the whites to firm peaks.
Step 5:
In two steps, add a mixture of almond flour and powdered sugar to the protein foam.
Step 6:
Mix the dough thoroughly with a spatula. By the way, depending on the size of the protein, the dough for almond cookies may turn out a little more or a little less thick, this will affect the shape of the cookie, it may turn out either flat or plumper, but it will not affect the taste, the cookies will be delicious in any case.
Step 7:
Using two teaspoons, spread the dough for future cookies on a baking sheet. We leave a distance of 4-5 cm between the cookies, since the cookies will spread out a little when baking. In total, out of this amount, I got 15 small cookies.
Step 8:
Sprinkle the cookies with sifted powdered sugar on top and send them to the oven to bake.
Step 9:
Bake cookies at 180 C for about 15-20 minutes, during which time the cookies will be covered with a hard caramel crust, and inside will remain slightly soft. If suddenly you want the cookies to be dry and completely crispy inside, then turn off the heating in the oven after 20 minutes, and leave the cookies to cool for 1 hour without taking them out of the oven, so it will reach full readiness.
Step 10:
After the cookie has completely cooled down, we store it in a plastic container with a lid, so it will remain crispy.

That's it. Our classic macaroons are ready.
