To cook this delicious Azerbaijani soup, chickpeas need to be soaked in water overnight. In the morning, drain the water and rinse the peas.
Next, prepare the meat: cut it into medium-sized pieces. Peel and cut the onion into half rings, the quince should be cut into small cubes.
While the oven is heating up (and the temperature we need is 190 degrees), we will start laying out the sliced products in pots. In total, we will take 6 of them. Put meat, chopped onion, quince pieces and chickpeas in the pots until the middle. Pour 200 ml of boiling water into each pot, cover with lids. Now the pots can be put in the oven (for half an hour).
At this time, prepare the remaining vegetables. Peel the potatoes, cut them coarsely, wash the tomatoes and cut them into cubes or small pieces. Add salt and ground pepper to taste. If necessary, top up the water. An important moment! It should not be too much, otherwise the future soup in the oven can run away. Again, we put the pots in the oven for 35-45 minutes.
After this time, we take the pots out of the oven. In each add a few peas of black pepper (you can also put a little chopped fresh mint). After that, let the soup stand for a few more minutes under closed lids.
The most delicious and fragrant soup is ready! Serve it to the table hot, garnish with mint sprigs, eat with slices of pita bread. Enjoy your appetite!!!
