Step-by-step cooking
Preparing cakes for the cake:
Beat eggs with sugar.
Add jam (I have cherry) to the beaten eggs. We also introduce kefir and soda there. mix it up. The mass begins to bubble, increases in volume. Add steamed and chopped dried fruits. I have almonds and raisins. Now we introduce the sifted flour. Mix everything together. The dough turns out a little thicker than pancakes.
I baked cakes in a detachable form with a diameter of 22 cm, covering the bottom with baking paper and greasing the sides with butter.
Baked 2 cakes in a preheated 180 degree oven for 25 minutes.
After the time had elapsed, the oven was turned off, and, opening the door slightly, gave the cakes a rest there. So they will not fall off and remain lush.
Taking the cakes out of the mold, she cut off a little from them a lush dome, which she then used for crumbs around the stump.
We cut each cake into 2 parts, we get 4 cakes. The cakes were soaked with water mixed with jam during assembly.
While the cakes are cooling down, we are doing the most interesting thing: cooking moss!
Break the egg into a bowl, add sugar and invert syrup to it. Beat with a mixer at high speeds until fluffy and increase in volume. Then we introduce 2-3 drops of dye, flour and baking powder. Now gently mix with a spatula from the bottom up. The finished mass lazily flows down from the shoulder blade. We put the mass in plastic cups, filling no more than 1/2 height, and put it in the microwave for 2 minutes at 800 watts.
Take out the glasses, turn them upside down so that the mass does not fall off, cool down.
We break the cooled moss into pieces.
Preparing the cream: whisk sour cream with sugar and add mascarpone.
Layering the soaked cakes with cream, we assemble the cake.
We cover the cake with the remains of the cream, I decorated the rings at the stump with chocolate with a syringe.
Warm up chocolate with milk for 1 minute.
We make a stump with prepared chocolate and moss. I added more figures made of sugar paste.
