Canned Saury Fish Soup with Rice and Potatoes
A delicious, simple, hearty soup for lunch. For me, canned fish soup is just about the fastest dish you can make for lunch. It easily feeds the whole family with minimal time and effort.

Step 1:
Get all the ingredients ready for the soup. Peel the onion, potatoes, and carrot and rinse them under running water to clean them. Open the can of saury. Use salt and spices sparingly, since the soup is quite flavorful on its own. Because canned fish already contains salt, salt the soup only after adding the fish, tasting it first.

Rinse the rice several times in cold water. Cut the peeled potatoes into small pieces.

Pour the soup water into a pot and set it over the heat. Bring the water to a boil and drop in the cut potatoes and rinsed rice. Bring everything back to a boil and leave to cook for 5 to 7 minutes over low heat.

Chop the peeled onion and carrot. Dice the onion finely. Grate the carrot on the fine side.

Pour a little vegetable oil into a skillet and sauté the chopped vegetables for 3 to 4 minutes, stirring so they don't scorch. Then add the finished sautéed vegetables to the soup pot. They give the soup a pleasant golden color and a more delicate flavor.

Next, add the canned saury to the soup. Don't drain the liquid from the can — add it to the soup too. If the pieces of fish are large, you can break them into a few parts. Add a little salt and spices to taste. Cook everything together for another 10 minutes and take it off the heat. The soup is ready! Ladle it into bowls and serve. If you like, add a little chopped fresh herbs to each bowl. Enjoy!
- As you can see, deciding to make a soup from canned fish saves you tons of time for other household chores. This soup has rice in it, but you can easily swap it for pearl barley or, say, lentils. And the saury itself can be replaced with any other canned fish, such as pink salmon or sardines. The recipe is so simple that even a beginner cook can manage it.
