Strawberry and custard cake

Almond sponge cake, vanilla cream, strawberries and pistachios! Instead of vanilla, you can add natural vanilla to the cream: cut the pod in half, peel the seeds and add them to the milk together with the pod. Bring to a boil and remove from heat. Remove the pod, strain the milk through a sieve.

Cooking method

1. Dough. Beat soft butter with sugar. Separate the whites from the yolks. Whisk the whites into a strong foam. Sift the flour with baking powder. Add yolks, almonds, flour, baking powder and milk to the butter. Beat until smooth. Gently mix the whipped whites.
2. Put the dough in a baking dish (25 × 25 cm).
3. Bake the sponge cake for about 30 minutes in a preheated 180 ° C oven.
4. Remove the sponge cake from the mold and cool. Then cut into 2 halves.
5. Cream. Bring the milk and vanilla to a boil and remove from the heat. Grind the yolks with sugar and starch, pour in a little hot milk and mix. Pour the egg mixture into the remaining milk and boil for about 1 minute with constant stirring. Remove the saucepan from the heat and cool. When the cream has cooled to 50 ° C, add soft butter and beat until fluffy. Cool.
6. Sauce. Wash the strawberries, sort and remove the tails. Grind with a blender into a puree, add sugar, agar-agar (you can without it) and bring to a boil. Cool.
7. Soak the cakes with strawberry syrup, smear with cream and stack on top of each other. Decorate the top with fresh strawberries. Pour strawberry sauce over the cake. Sprinkle chopped pistachios on top.
