Cooking method
First of all, we will prepare a sourdough:
- mix yeast with flour, pour warm water, mix;
- cover with a napkin and leave for an hour.
Next, knead the dough:
- sift flour into the dough, beat in eggs, add salt and sugar, as well as a couple of drops of vanilla essence;
- knead the soft dough;
- we introduce softened butter, mix it into the dough;
- we wash the raisins, dry them, and also put them into the dough;
- knead (the dough will be sticky and stringy);
- let the dough come up for 30-60 minutes, covered with a cloth napkin.
Fill the silicone molds with half the dough, let them come up a little - 15 minutes will be enough. We send the molds to the oven, preheated to 200 degrees, for 40 minutes.
Remove the finished cupcakes from the molds and pierce with a toothpick.
Prepare the syrup for impregnation: boil the water and sugar, cook until the sugar crystals completely dissolve, and when the mixture cools down, add rum.
Dip each cupcake in syrup, let it soak thoroughly.
Decorate cupcakes with sugar fudge, and for this:
- mix sugar with water and lemon juice, cook until thick;
- remove from heat, let cool (to about 60 degrees);
- beat the mass until white.
