First let's make a shortbread dough. To do this, mix the butter (not very soft - this is very important) with flour and egg. Carefully knead the dough until it becomes homogeneous. After that, you need to wrap it tightly with cling film and put it in the refrigerator for 15 minutes.

Wash well and finely chop the leeks. Rinse and dry the vegetable mixture.
Fry mussels, leeks, and vegetables in a hot frying pan with vegetable oil. After a couple of minutes, top up the wine and leave the filling on low heat until the alcohol has completely evaporated.

Beat the remaining eggs with a whisk, add cream and a little salt. Then pour in the toasted mussels, a mixture of vegetables and a little grated cheese.

Take the dough out of the refrigerator and roll it out into a 4-5 mm thick cake. Place the resulting cake on a baking sheet or baking dish so that the bottom and sides are formed. With a fork, pierce the dough in several places and put the filling on it. Sprinkle with grated cheese.

Bake lauren quiche for 35 minutes at 180 degrees. Cut the finished and slightly cooled lauren quiche into pieces and serve to the guests.
