Awesome wedding cake offers us to cook a real culinary recipe. This is a masterpiece of French cuisine, because it consists of meringue – light, delicate, airy. Such food is not prepared every day, it is exclusively a festive dessert, the preparation of which will take a very long time.
Before whipping the egg whites, you need to cool well, this is important! We separate the whites from the yolks. Whisk the proteins in a mixer at high speed to a steep foam. After, without turning off the mixer, but reducing the speed, pour the sugar in a thin trickle. When the sugar has dissolved, pour in a tablespoon of lemon juice. Beat until the mixture becomes thick. Now, on a parchment-lined baking sheet, bake the meringue in the oven at 100 degrees for three to five hours. Meringue should dry out, not bake. We should get meringue cakes – round, with a diameter of: 28, 24, 20, 16, 12, 8, 4 centimeters. Each is baked separately (you can put two cakes in the oven on top of each other). Now we prepare custard from these ingredients, one-fourth of which we postpone. In the rest, add chopped walnuts, pieces of prunes. Each cake is coated with cream and stacked on top of each other with a pyramid. After the intervals between the cakes, decorate with the remaining cream, squeezing it out of the cooking bag in the form of stars. The center of each is decorated with marzipan or fresh berries.
