Step 1:
Wash potatoes and boil in a uniform until ready, 20 min. Peel and chop the onion. Wash the spinach, cut off the stalks. Put the leaves in a dry saucepan and put on a small fire. As soon as the leaves are suspended, remove from the heat and squeeze out as much moisture as possible.
Step 2:
Peel the potatoes and rub them through a sieve. Add almost all the flour, baking powder, 1 egg, a little salt. Knead a homogeneous dough.
Step 3:
Heat vegetable oil in a saucepan, fry onion, 4 min. Add spinach and cook, stirring, for 2 minutes. Transfer the spinach and onion to a bowl, let cool slightly. Add cottage cheese, half of the parmesan, egg yolk, nutmeg, salt and pepper. Mix thoroughly.
Step 4:
Roll out the potato dough on a floured surface into a rectangle measuring 35x25 cm. Cover it with strips of bacon. Distribute the spinach filling over the dough, leaving about 1.5 cm around the edges .
Step 5:
Roll up, wrap tightly in a linen napkin and tie the ends with twine. Place the roll in a wide saucepan with boiling salted water, cook for 30 minutes.
Step 6:
Remove the roll from the pan, unwrap and let cool. Cut into pieces 1.5 cm wide . Put them in a low baking dish, pour melted butter and sprinkle with the remaining Parmesan. Put in a preheated 200 ° C oven for 15 minutes. Immediately serve to the table.
