French custard unsweetened buns with cheese and spices

Exquisite taste from French chef Alain Ducasse! Gougers are such small custard rolls with cheese, they were invented in France and served there during wine tasting. I cooked these gougers according to the recipe of Alain Ducasse.

Add milk, butter, salt to the water in a saucepan. Let it boil. Immediately pour in the flour and mix. Keep it for a couple more minutes, stirring. You should get a smooth dough, lagging behind the walls and bottom.
After a couple of minutes, drive in one egg at a time, mix well after each. Then add salt, nutmeg, pepper, cheese, grated on a fine grater.
We cover the baking sheet with parchment paper and using a pastry bag at a distance of about two cm from each other we put small balls. Since the buns will increase in size, sprinkle them with cheese on top and put them in the oven for 20 minutes at a temperature of 200 gr.
Inside the buns have large pores. We serve them hot or warm.
French custard buns gougers are also good because they can be frozen, and if necessary, reheat for a few minutes in a hot oven.
