    How do you make mashed potatoes with fried onion? Gather everything you'll need. You can use milk of any fat content. For a creamier flavor, you can even use cream.

    Peel the potatoes and wash off any dirt. Cut large potatoes into 2–3 pieces; small ones can be left whole. Put the prepared potatoes in a pot and add enough water to cover them completely. Set it over the heat and bring to a boil. Add salt. Then lower the heat a bit and cook the potatoes until tender, about 15–20 minutes. Pierce them with a knife — if they're soft, they're done.

    While the potatoes cook, prepare the onion. Peel it, rinse it, and chop it finely. Heat a skillet until hot and pour in a little vegetable oil. Add the chopped onion and fry it, stirring, until golden, about 3–5 minutes.

    When the potatoes are done, drain off the hot water. Add the fried onion and butter to the pot. Mash the potatoes with a potato masher.

    Heat the milk until hot and pour it into the potatoes. Keep mashing until smooth. The potatoes will gradually absorb the milk. If you like your mash looser, add more milk. Go by your own taste for the consistency.
