Cooking method

Prepare the filling: grate the cheese. Garlic is passed through a garlic juicer. Combine the cheese with garlic, add a little mayonnaise to make a thick mass, and mix well. Crab sticks carefully unfold. Put about 1 teaspoon of filling in the middle of the stick, smooth it out, and roll the stick, giving it its original shape.
Prepare beer batter: carefully separate the egg whites from the yolks. Put the proteins in the refrigerator. Place the yolks in a bowl, add salt and grind a little. Pour chilled water and cold beer into the yolks, and beat lightly with a fork or whisk. Gradually adding the sifted flour, knead the dough. The consistency of the dough should turn out like pancakes. Beat the cooled proteins with a mixer into a dense foam and add to the batter. Gently mix the whites with the batter with a spoon, not in circular movements, but from top to bottom.
In a small saucepan, heat the vegetable oil for deep frying (the oil should be so much that it can be completely immersed in a crab stick). Stuffed crab sticks should be carefully put on a fork, dipped in batter and fried until ruddy. Remove the fried crab sticks from the deep fryer with a slotted spoon, and spread on paper napkins to remove excess oil.
You can serve sauce to crab sticks: peel garlic and pass it through a garlic juicer. Wash, dry and chop the greens. Put sour cream in a bowl, add garlic, herbs, lemon juice, salt, freshly ground pepper and mix well. All. You can try.
