Cooking method
1. Put the gelatin in a bowl, pour it with cold boiled water. We leave it for swelling.
2. We break shortbread cookies into pieces with our hands, put them in the bowl of a blender. Next, we grind the cookies into fine crumbs.
3. Add softened butter to the resulting crumb. Once again we punch with a blender. Butter and cookies should be well combined. The mass turns out to be plastic.
4. We install a detachable cooking ring on a large flat plate or any other cake stand. You can use a conventional split baking dish, just remove the bottom.
5. Spread the resulting mass of cookies, carefully tamped. Then we send it to the refrigerator.
6. We put the cottage cheese in a bowl, pour sugar here and pour yogurt. Punch the mass with an immersion blender until smooth. The sugar crystals should completely dissolve.
7. The cooled cream is whipped with a mixer into a fluffy mass. First, whisk at minimum power, gradually increasing it. Combine the whipped cream with the curd mass, mix.
8. My strawberries, remove the tails. Each berry is cut into 2 or 3 parts, depending on their size.
9. The swollen gelatin is squeezed out of the water, then heated in a water bath until completely dissolved. You can't boil it!
10. We drive the gelatin into the creamy curd mass, mix gently.
11. We spread part of the strawberries on a cookie base. Pour the prepared curd mass. Decorate the surface with the remaining strawberries.
12. We send the cake to the refrigerator for 3-4 hours, until the souffle is completely frozen. After the specified time, we carefully pass the knife along the edge of the ring, remove the cake.
