- Whether you've got company coming or just want to treat the family to something homemade, these gummy candies make a great treat — and we're making them from jam. Which kind? Whatever you prefer. The process is genuinely simple. Here's how: 1. Put the gelatin in a small bowl, cover it with warm water (100 ml is plenty), and let it stand until it swells. 2. Put the jam in a pot, add 200 ml of water, and stir. Set it over the heat and bring it to a boil. 3. Once it boils, add the bloomed gelatin. Stir until the gelatin fully dissolves, keep it on the heat for another minute or two, then take the pot off the stove. 4. Add the freshly squeezed lemon juice and blend the mixture smooth with an immersion blender. 5. Strain the purée through a sieve or cheesecloth to be sure there are no lumps — this is what gives you a smooth, delicate, good-looking candy in the end. Then pour the mixture into a mold and let it cool to room temperature. 6. Refrigerate the mold to set for about three hours. You can leave it longer — for instance, make the candy in the evening and leave it in the fridge until morning. 7. Before serving, cut the candy into pieces and sprinkle them with sugar.
