Find wonderful, tried-and-tested homemade marmalade recipes here. Try making marmalade from all sorts of fruits, berries or juice, with honey or fructose, thickened by boiling down or by adding natural gelling ingredients. Make marmalade as firm as store-bought candy, or as soft as you could wish.
There are only three variations of marmalade — berry, fruit (which can be made from juice) and jelly, made from berry-and-fruit jelly (homemade jelly or jam). The main principle of making marmalade is boiling down fruit-and-berry bases until they thicken. Honey is often added as a sweetener. Fruits with a high natural pectin content are suited to this method: quince, apple, pear, melon, peaches, apricots and plums, sour and sweet cherries, currants. In all other cases the gelling thickeners will be agar-agar, gelatin or starch.
The five most commonly used ingredients in homemade marmalade recipes:
| Product | Calories per 100g | Protein g per 100g | Fats g per 100g | Carbohydrates g per 100g |
|---|---|---|---|---|
| Sugar | 398 | 0 | 0 | 99.7 |
| Gelatin | 355 | 87.2 | 0.4 | 0.7 |

| Citric acid | 0 | 0 | 0 | 0.2 |
| Honey | 400 | 0.8 | 0 | 81.5 |
Interesting recipe:
1. Mix half of the fruit juice with agar-agar powder. Let the thickener swell for half an hour.
2. Pour the other half into a saucepan, add sugar and bring to a boil.
3. Mix the resulting hot syrup with the swollen agar-agar. Stirring, bring back to a boil, but it's best not to let it boil hard.
4. Let the juice cool.
5. Pour into molds (silicone are best).
6. Put it in the refrigerator.
7. Once set, remove the marmalade from the molds and decorate as you like and to taste. Serve with tea.

• If you want to create a marmalade with uniquely healthy qualities, you need to replace the sugar with honey, fructose or stevia.
• Marmalade made from fresh or freshly frozen raspberries with honey can be used as a tasty cold remedy.
• Agar-agar is convenient in use because after cutting out all kinds of marmalade shapes, the leftover pieces can be gathered up, warmed, cooled and turned into candy again.
