Cooking method
Put the pre-washed shins in a deep bowl, sprinkle with dry spices, salt.
Preparing a smokehouse (if there is no smokehouse, you can use a frying pan):
- line the bottom with parchment, spread onion husks, rice, tea;
- next we put a grill (if we use a frying pan, then we make a grill of bamboo barbecue sticks);
- lay out the shins and close the lid (in the case of a frying pan - foil);
- we send it to the fire, first using a large one for heating, literally for 5 minutes, then we reduce the fire to a minimum. We smoke for 60 minutes.
Ready-made shins are served on the table. Bon appetit!
