Take gelatin and 100 ml of cold boiled water. Soak the gelatin in water for two hours.
Soak sugar in 200 ml of cold boiled water for 2 hours.
Put the sugar on the fire, boil for 7-8 minutes with constant stirring, and remove from the heat.
Put gelatin in sugar and beat with a mixer for 10 minutes. It is necessary to beat at a low speed, preferably at one.
Add citric acid, continue to beat for another 5 minutes.
Add vanilla sugar and soda to the same mass – beat for 5 minutes. Leave the mass to stand for 10 minutes.
Take a baking sheet, cover it with baking paper, do not grease it, and spread the mass on the baking sheet with a spoon or a cooking syringe.
Put in the refrigerator, but not in the freezer.
It is very important not to change the recipe, add absolutely nothing and not deviate from the specified time. It is advisable to accurately weigh the right amount of ingredients on the scales, and not take their approximate amount. If you change something, it may not work. But if you do everything as it is written, then you will get a great marshmallow and everyone will like it. If you want to surprise your loved ones, prepare marshmallows.
