Cooking method
1. Divide apricots into two parts, remove the seeds.
2. In a suitable sized saucepan, mix water, sugar, citric acid. Bring to a boil and boil the syrup for 5 minutes.
3. Put the apricots in the boiling syrup. After re-boiling, cook the apricots in syrup for 15 minutes.
4. As soon as the apricots are boiled, turn off the heat and let them cool in the syrup.
5. Preheat the oven to 50 degrees. Get the cooled apricots with a slotted spoon and put a layer on a baking sheet lined with parchment.
6. Put a baking sheet with apricots to blow in the oven for two hours.
7. From the oven, place the apricots on a grid to dry in the shade in a warm, dry draft. For example, on the loggia or on the balcony to dry for one or two days.
8. After drying, roll the fruit in granulated sugar or powdered sugar. Store candied fruits in a cool, dry place in a closed container.
